Healthy oaty banana pancakes

A truly delicious and super simple pancake recipe with no gluten or dairy. So easy to whizz up in the blender - add some protein powder for an extra protein hit.

Ingredients (serves 3)

2 medium ripe bananas

2 eggs

125ml unsweetened almond milk (or any plant milk)

1 tsp vanilla extract

140g oats

2 tsp baking powder

Pinch of salt

Olive oil for cooking

Method:

  • Add all of the ingredients to a blender or nutribullet, and blend on high until smooth

  • Heat a non-stick frying pan with a tiny amount of oil until hot

  • Turn the heat down a little, and fry each pancake until it puffs up (1 minute), flip and repeat. You choose what size you prefer - I like lots of small ones! This recipe makes about 10 -12 small ones.

  • Serve with berries, banana slices, greek yogurt etc
