Yogurt Berry Bark
A lovely light sweet snack which can be stored in the freezer.
Ingredients
500g greek yogurt
150g frozen berries
30g pistachios, roughly chopped
1 tbsp honey or maple syrup
Method:
Line a large baking tray with greaseproof paper and spread the greek yogurt over it in an even layer
Add the berries and pistachios on top evenly, and freeze for 2hrs until solid
Peel away paper carefully, break into rough shards, and place in a freezer bag. This will keep for up to 3 months
Lovely as a mid afternoon snack with a herbal tea
Try other toppings such as dates and orange zest, or fresh figs and raspberries.
