Yogurt Berry Bark

A lovely light sweet snack which can be stored in the freezer.

Ingredients

500g greek yogurt

150g frozen berries

30g pistachios, roughly chopped

1 tbsp honey or maple syrup

Method:

  • Line a large baking tray with greaseproof paper and spread the greek yogurt over it in an even layer

  • Add the berries and pistachios on top evenly, and freeze for 2hrs until solid

  • Peel away paper carefully, break into rough shards, and place in a freezer bag. This will keep for up to 3 months

  • Lovely as a mid afternoon snack with a herbal tea

  • Try other toppings such as dates and orange zest, or fresh figs and raspberries.
